TooeleTV.com

I had the opportunity to meet with Chante Wouden from TooeleTV.com last week. It was so much fun to tell her all about the amazing opportunities I had this year to teach, learn, and encourage FANtastic fitness and nutrition to the community. And also for her to witness the Hustle for Hunger 5K that turned out to be an amazing experience and great success (thanks to everyone in the community who came and supported the event!!!) A Royal Attack on Obesity: Miss Tooele County 2011

Tooele County is the most obese county in the state of Utah. Ashley Eccles decided to do her part to help change that. Chante Wouden caught up with her at a 5k race she organized and learned her platform as Miss Tooele County 2011 went well beyond the days' events.

Hidden Surprise Easter Egg Treats


Ingredients
12 plastic snap-apart Easter Eggs
3 tbl butter or margarine
1 package regular marshmallows
or
 cups Rice Krispies cereal
1/2 cup m&m chocolate candies
Canned frosting or decorating gel cups miniature marshmallows (1 7 oz jar marshmallow creme) 


1. Clean, then coat inside of plastic eggs with cooking spray. Set aside.
2. In large saucepan melt butter over low heat. Addmarshmallows and stir until completely melted. Remove from heat.3. Add KELLOGG'S RICE KRISPIES cereal. Stir until well coated.4. Using greased hands, firmly press 1/4 cup of the cereal mixture into each plastic egg half. Use fingers to make hollow center in each half. Remove from molds. Place on wax paper. Cool slightly.5. Place about 6 M&M'S® Brand Chocolate Candies in one half of each egg. Gently press two halves of each egg together until they stick. Cool completely.6. Decorate with frosting and additional M&M'S® Brand Chocolate Candies (if desired). Best if served the same day.



MICROWAVE DIRECTIONS: Follow step 1 above. In microwave-safe bowl heat butter and marshmallows on HIGH for 3 minutes, stirring after 2 minutes. Stir until smooth. Follow steps 3 through 6 above. Microwave cooking times may vary.

Corned Beef and Cabbage
Prep Time: 10 Minutes
Cook Time: 2 Hours 25 Minutes
Ready In: 2 Hours 35 Minutes
Servings: 5
INGREDIENTS:
3 pounds corned beef brisket with spice
packet
10 small red potatoes
5 carrots, peeled and cut into 3-inch
pieces
1 large head cabbage, cut into small
wedges
DIRECTIONS:
1.Place corned beef in large pot and cover with water. Add the spice packet that came with the corned beef. Cover pot and bring to a boil, then reduce to a simmer. Simmer approximately 50 minutes per pound or until tender.
2.Add whole potatoes and carrots, and cook until the vegetables are almost tender. Add cabbage and cook for 15 more minutes. Remove meat and let rest 15 minutes.
3.Place vegetables in a bowl and cover. Add as much broth (cooking liquid reserved in the Dutch oven or large pot) as you want. Slice meat across the grain.

Smiling Apples :D



Ingredients:
1 medium red apple, sliced
3-4 tbs. peanut butter
32 miniature marshmallows

Directions:
1. Wash, core, and cut up apple into 8 slices
2. Spread peanut butter on each apple slices
3. Place 3-4 mini-marshmallows on top of peanut butter of one apple slices. Top with another and press together to make one "smiling" apple.

Valentines Mini Molten Chocolate Cake


Are you in need of a sweet desert for valentines? Try these yummy Mini Molten Chocolate Cakes. Every girls loves chocolate and it's even better that it's under 250 calories! :) Enjoy!
INGREDIENTS
4 ounces  dark or bittersweet chocolate, (60-75% cacao), coarsely chopped
2 tablespoons  unsalted butter, cut into chunks
1 tablespoon  granulated sugar
1 1/2 tablespoons  light cream
2 teaspoons  instant espresso powder, or granules dissolved in 1 tablespoon hot water, divided
1 tablespoon  light corn syrup
1 large  egg
2 tablespoons  canola oil
1 teaspoon  vanilla extract
1/8 teaspoon  salt
5 tablespoons  confectioners' sugar
3 tablespoons  all-purpose flour
1 tablespoon  unsweetened Dutch-process cocoa powder
1-3 teaspoons  very hot water
DIRECTIONS
1. Position rack in center of oven; preheat to 350 degrees F. Generously coat the mini muffin pan with cooking spray.
2. Place chocolate and butter in a medium microwave-safe bowl. (Alternatively, see "No Microwave?" below.) Microwave on High for 1 minute. Stir well, then continue microwaving on Medium, stirring every 20 seconds, until the remaining chocolate melts completely.
3. To prepare filling: Stir together granulated sugar, cream and half the espresso mixture in a small microwave-safe bowl. Microwave on High just to steaming, 20 to 40 seconds. (Alternatively, combine in a small saucepan and heat over medium-low heat until just steaming.) Stir until the sugar dissolves. Add corn syrup and half the melted chocolate (reserve the other half for the batter); stir until completely smooth. Cover and transfer to the freezer until cold and firm, about 30 minutes.
4. To prepare batter: When the filling has been chilling for 20 minutes, whisk egg, oil, vanilla, salt and the remaining espresso mixture in a medium bowl until very smooth. Return the remaining chocolate mixture to the microwave. Microwave on Medium, stirring every 20 seconds, until just warm again (do not overheat). In two batches, whisk the egg mixture into the warm chocolate until well blended. Sift confectioners' sugar, flour and cocoa over the batter and whisk in just until smoothly incorporated.
5. To assemble cakes: Remove the filling from the freezer. Spoon half the batter into the mini muffin cups, about 1 rounded teaspoon per cup. Spoon 1/2 teaspoon filling onto the center of each (reserve the rest for the sauce). Divide the remaining batter evenly among the muffin cups, about 1 rounded teaspoon per cake. Smooth out the batter to cover the filling.
6. Bake the cakes on the middle rack until the edges look dry and puffed but the centers still look very underdone and pudding-like, 6 to 9 minutes. Let cool on a wire rack until firm, about 2 minutes. Place a cutting board on top of the pan and invert the mini cakes out onto it. If the cakes are stuck to the pan, run a knife around and under them to loosen.
7. To prepare sauce & serve: Thoroughly stir very hot water into the reserved filling, 1 teaspoon at a time, until very smooth and slightly fluid. Serve the warm cakes drizzled with the sauce.
Tips:
No Microwave? Melt chocolate in a double boiler instead: Place chopped chocolate in the top of a double boiler over hot, but not boiling water. Gently stir until the chocolate is almost melted. Remove from the heat and stir until it melts completely.

MAKE AHEAD TIP: Prepare through Step 5, cover and refrigerate for up to 2 days. After baking (Step 6), the cakes will keep in the pan, tightly covered with foil, for up to 1 day. The sauce (Step 7) will keep, covered, in the refrigerator for up to 5 days. To serve, reheat the cakes in the covered pan at 350 degrees F for 10-12 minutes. Reheat the sauce in a microwave on Medium for about 20 seconds.

Those Mysterious Things Called Calories!


What exactly are calories? Why are they so important?

A calorie is a unit of measurement — but it doesn't measure weight or length. A calorie is a unit of energy. When you hear something contains 100 calories, it's a way of describing how much energy your body could get from eating or drinking it.

Calories aren't bad for you. Your body needs calories for energy. But eating too many calories — and not burning enough of them off through activity — can lead to weight gain.

You can find out how many calories are in a food by looking at the nutrition facts label. The label also will describe the components of the food — how many grams of carbohydrate, protein, and fat it contains.

Some people mistakenly believe they have to burn off all the calories they eat or they will gain weight. This isn't true. Your body needs some calories just to operate — to keep your heart beating and your lungs breathing. And you can even burn off some calories without even thinking about it — by walking your dog or making your bed.
