TooeleTV.com

I had the opportunity to meet with Chante Wouden from TooeleTV.com last week. It was so much fun to tell her all about the amazing opportunities I had this year to teach, learn, and encourage FANtastic fitness and nutrition to the community. And also for her to witness the Hustle for Hunger 5K that turned out to be an amazing experience and great success (thanks to everyone in the community who came and supported the event!!!) A Royal Attack on Obesity: Miss Tooele County 2011

Tooele County is the most obese county in the state of Utah. Ashley Eccles decided to do her part to help change that. Chante Wouden caught up with her at a 5k race she organized and learned her platform as Miss Tooele County 2011 went well beyond the days' events.

Hidden Surprise Easter Egg Treats


Ingredients
12 plastic snap-apart Easter Eggs
3 tbl butter or margarine
1 package regular marshmallows
or
 cups Rice Krispies cereal
1/2 cup m&m chocolate candies
Canned frosting or decorating gel cups miniature marshmallows (1 7 oz jar marshmallow creme) 


1. Clean, then coat inside of plastic eggs with cooking spray. Set aside.
2. In large saucepan melt butter over low heat. Addmarshmallows and stir until completely melted. Remove from heat.3. Add KELLOGG'S RICE KRISPIES cereal. Stir until well coated.4. Using greased hands, firmly press 1/4 cup of the cereal mixture into each plastic egg half. Use fingers to make hollow center in each half. Remove from molds. Place on wax paper. Cool slightly.5. Place about 6 M&M'S® Brand Chocolate Candies in one half of each egg. Gently press two halves of each egg together until they stick. Cool completely.6. Decorate with frosting and additional M&M'S® Brand Chocolate Candies (if desired). Best if served the same day.



MICROWAVE DIRECTIONS: Follow step 1 above. In microwave-safe bowl heat butter and marshmallows on HIGH for 3 minutes, stirring after 2 minutes. Stir until smooth. Follow steps 3 through 6 above. Microwave cooking times may vary.

FANtastic Vernon Elementary!

Vernon Elementary signed the pledged to be FANtastic!
It was so fun to see all the student's and have the Dairy Princesses with me! 
What a great group of kids! Keep up the good work!

A taste of Ireland!

Corned Beef and Cabbage
Prep Time: 10 Minutes
Cook Time: 2 Hours 25 Minutes
Ready In: 2 Hours 35 Minutes
Servings: 5
INGREDIENTS:
3 pounds corned beef brisket with spice
packet
10 small red potatoes
5 carrots, peeled and cut into 3-inch
pieces
1 large head cabbage, cut into small
wedges
DIRECTIONS:
1.Place corned beef in large pot and cover with water. Add the spice packet that came with the corned beef. Cover pot and bring to a boil, then reduce to a simmer. Simmer approximately 50 minutes per pound or until tender.
2.Add whole potatoes and carrots, and cook until the vegetables are almost tender. Add cabbage and cook for 15 more minutes. Remove meat and let rest 15 minutes.
3.Place vegetables in a bowl and cover. Add as much broth (cooking liquid reserved in the Dutch oven or large pot) as you want. Slice meat across the grain.

Smiling Apples :D



Ingredients:
1 medium red apple, sliced
3-4 tbs. peanut butter
32 miniature marshmallows

Directions:
1. Wash, core, and cut up apple into 8 slices
2. Spread peanut butter on each apple slices
3. Place 3-4 mini-marshmallows on top of peanut butter of one apple slices. Top with another and press together to make one "smiling" apple.
